Sourdough Almond and Orange Cookies

Ingredients
 20 g Sourdough discard
 200 g Whole Wheat FlourOr Substitute all purpose white flour
 100 g Almond flourOr other nut flour including coconut flour
 Pulp from one medium orangeRemove membrane and seeds, liquefy in food processor.
 ½ tsp Zest of orange Or few drops of edible orange oil
 60 g Soft butter Or Ghee
 100 g SugarAdjust if you like sweeter cookies

Method
1

Mix all the ingredients together. Make a soft dough, the consistency should be pliable.

Cover in cling wrap and refrigerate for a few hours.

Remove from fridge and let soften a bit at room temperature.

Roll dough 1/8th inch thickness between 2 sheets of the parchment paper.

Once its rolled cut cookies with the shape you like either by a cookie cutter or just by knife.

Gently lift and shift to the parchment lined baking tray.

Bake in pre-heated oven at 340F/170C until edges are lightly golden brown. Watch carefully.

Once cooled, store in an airtight container.
