Coffee Banana Bread
This variation on banana bread is delicious! We’ve added coffee, chocolate chips and nuts for a deeper richer flavor punch! Enjoy with your favorite cup of tea or joe! This is a quick bread made with baking soda, so it is quick and easy. This recipe was formulated by Adrian Greenway. Follow the recipe below:
In a medium mixing bowl, weigh out and prepare the bananas by mashing them with a fork. Mash well so there are no large lumps.
Once the bananas are mashed, add the melted butter, brown sugar, vanilla, instant coffee granules and the eggs.
Using a whip, beat the mixture until the ingredients are incorporated. Set bowl aside.
In a medium mixing bowl, mix together the flour, salt and baking soda.
Then add the walnuts (or pecans) and chocolate chips. Mix the nuts/chips into the flour mixture. Then pour the dry ingredient bowl into the wet ingredient bowl and mix together. Only mix until the ingredients are incorporated. Do not over-mix.
Using small loaf pans (6x3x2.5)(LxWxH) grease or use pan spray to coat the inside of the pan. You can fill four of these small loaf pans. Fill about 7/8 full.
Bake at 350F for 35-40 minutes or until a toothpick inserted comes out clean and loaf is nicely browned.
Once finished baking, place pan on cooling grate and allow to cool five minutes. Then turn loaves out onto cooling grate and finish cooling.
Once cool, slice and serve with butter or cream cheese.
