King Arthur’s Parchment Paper
Over the years, I’ve used many different brands of parchment paper. Some of the paper was more like tissue paper than parchment paper. I try to use my parchment paper several times, at least until it becomes too brittle and starts to tear and fall apart. Usually I can get at least two, sometimes three uses from parchment paper. I often will purchase the 100 quantity papers from restaurant supply or from Amazon. However, I decided to try the King Arthur parchment paper and see how it performed. I was certainly surprised! King Arthur’s parchment paper is really a superior quality paper. It feels thicker, more sturdy. It performed beyond my expectation. I usually will cut a half size sheet (13×18″) into two pieces (13×9″) for my 860 gram loaves. So it takes two half sized sheets for my batch of four loaves. The first time I used it, I just seemed to keep baking with the sheets and realized it was holding up beyond several baking sessions. Then I decided to keep track of how long it held out before becoming unusable. Here’s what the sheets looked like after each bake:

You can see the sheets started to tear during bake 5, but they lasted through bake six as well. Then I decided to bin them as they were becoming more brittle and fragile. The final result was that I used the sheets for six bakes!

That means that purchasing 100 pieces of parchment paper is equal to purchasing 600 sheets (but at the price of only the 100 sheets). With lesser quality parchment sheets, you would have to purchase 600 sheets if you could only use them once (like some of the parchment paper that is more like tissue paper than parchment paper). So if you’ve balked at purchasing the King Arthur’s parchment paper because of the price, I would say that their brand of parchment paper is the more cost effective choice to buy. I know I will be sticking with this brand for future purchases of parchment paper.
My usual sourdough bread bake temps are around 460-480F/237-248C
Even if you only got 5 bakes per sheet, (equal to 500 sheets) since I cut the sheets in half, that would mean you are baking 1000 loaves before you need to purchase more sheets! I’ve purchased baking parchment sheets for less, but with the amount of reuses, the cost is much lower to purchase the higher quality sheets.
