I fed my sourdough starter quite a bit, since I was planning on baking a large batch of bread. I got too busy to mix bread that evening so the next day I was faced with a large amount of starter to do something with. I decided to make a batch of flatbread to have for dinner that evening.
If you’ve got a lot of starter and you want to do something with it, turn it into flatbread, it’s always a fun and delicious way to use up your extra starter. This formula uses fed, vigorous starter, not discard (which is depleted and lacking in gluten strength).
