Peanut Butter Christmas Cookies

Baking cookies for Christmas/holidays is traditional. You can take a regular cookie recipe and add some pizzazz to the final cookies to make them extra special. This is my formula for Peanut Butter Christmas Cookies. This dough is made using my Professional Kitchen Aid 6 qt mixer and is just the right amount for the mixer to handle. It will make about 2 dozen large cookies (at 60 grams each). Use whatever mixing speeds on your mixer that work for you. This dough was formulated by my son, Whitley and myself when he was just a boy (he loves peanut butter cookies!).
