Sourdough Waffles from “Make Your Own Sourdough Starter With Me!”

Small batch for about 3 waffles:

In first bowl mix together:
96 grams sourdough starter @ 100%
• 88 grams water
• 55 grams milk
• 1 large beaten egg
• 11 grams malt or maple syrup
• 35 grams butter melted, cooled slightly
In second bowl mix together:
• 77 grams all purpose flour
• 3 grams salt
• 1/4 teaspoon baking soda – 1 grams
• 1 teaspoons baking powder – 5 grams
Stir the contents of the two bowls together just until mixed and make waffles in your waffle iron set to the highest temperature.

Larger batch makes about seven 8 inch waffles:
In first bowl mix together:
190 grams sourdough starter @ 100%
• 176 grams water
• 110 grams milk
• 2 large beaten eggs -3.5 oz/99g
• 1 Tablespoon of malt or maple syrup –22 grams
• 70 grams butter melted, cooled slightly
In second bowl mix together:
• 155 grams all purpose flour
• 6 grams salt
• ½ teaspoon baking soda – 2 grams
• 2 teaspoons baking powder – 9 grams
Stir the contents of the two bowls together just until mixed and make waffles in your waffle iron set to the highest temperature.

Serve hot with butter and syrup or fruit and whipped cream.
